Weekend in Placencia

On the Topic Air flight when we first arrived in Belize, Caroline and I met a wonderful woman named  Jacki, who owns Casa Placencia in Placencia, thus we were determined to take a trip to Placencia at some point to visit her!
Mine and Carley's room- with AC and cable TV!
The view from outside our room.

After a long week, we needed some relaxing time!  The rehab team, Caroline, Carley, Stacy, Monica and myself  decided to not go to Livingston, Guatemala When we first got to Placencia, I might not have been prepared for the weekend, as I usually am.  I had our hotel figured out, just had no idea where it was in relation to getting off the water taxi. So we asked for directions and walked out of town to where we thought our hotel was, but then decided it wasn't in that direction and turned around and walked down to the other end of the island, and found someone who knew where it was. Which was where we were initially! oh man- so after walking up and down the same street 3 times, we stopped for the BEST GELATO EVER! and then a drink  and chips and dip at Barefoot Bar before making the trip again to our hotel.  Once at the hotel, we were able to shower and get ready in the AC before heading to a late dinner! Dinner was at Rumfish- a delicious restaurant owned by a cute couple. we all had a specially infused cocktail- mine was starfruit. and then had a yummy dinner. see pictures below....

Rum Fish- where we ate
Hummus!!!! Finally found some after being deprived for 6 weeks

Shrimp Cake
So over the past 2 weeks, Caroline and Carley had this "allergy" sinus thing going on.... well it finally hit me Friday night/ Saturday morning.... so needless to say- it was the perfect weekend for me to get my rest on... in the AC room watching cable TV!

Saturday morning, I slept in and then we biked across town to the Shack for breakfast, They had SOY MILK! yesss- you have no idea how excited it get when places have soy milk down here, it's a rarity!  I had a soy, banana, pineapple smoothie and a breakfast burrito. Perfect start to the day, in which I then proceeded to lay in bed watching Veronica Mars on Soap Net for 3 hours while everyone else had a head start on the beach.  Then I finally made it to the beach- see pictures of the white sand and blue skies below :)

The colorful gelato! so many choices!

Saturday Night we went out searching for a place to eat... we ended up going to the Purple Space Monkey- yummy once again. I had sushi- tuna and tempora shrimp and a salad with fruit and vegetables and a pretty tequila sunrise- I've been waiting for one!

Then of course, we went and got more gelato! look at all the amazing choices!

It was an early night Saturday- but when we got back to the hotel, we were able to watch some of the Olympics- we watched the Men's Medley relay- in which we won GOLD and it was Michael Phelps' last race in the Olympics. So that was neat to get to see that!

Sunday morning began with an attempt to get over this sickness I had, so I took a little walk around the town.  Then we were able to drive Jacki's car to Maya Beach, which was about 9 miles down the road, to a Bistro/ resort.  Jacki is the nicest, most accommodating, friendly, and thoughtful person ever. She offered us her car to drive to breakfast and made our stay in Placencia amazing.  The breakfast was too good. I keep saying the food was delicious everywhere because it's the truth- we have been eating so well here! After breakfast we were able to lay out at the little pool that the resort had, which was a treat to not have the sandy beach and there were comfy chairs to lay out on! Then we went to town to get more gelato of course- it was actually the last day the place is open before the owners go on holiday to Italy for 2 months, so yes we had to have it everyday!

Sunday afternoon- we hung out at the beach again then made our way back to the hotel and then caught the 4pm water taxi back to Independence to then catch the James Bus back to Hillside.

It was a nice relaxing weekend, a much needed break from all the business of everything. And I got some sun :) what a nice bonus!
